Brazzein Protein, 2,000 Times Sweeter Than Sugar, Halves Ice Cream's Blood Sugar Response in Study
A new study published in Clinical Nutrition ESPEN indicates that brazzein, a protein 2,000 times sweeter than sugar, significantly reduces the post-meal blood sugar spikes from ice cream. Researchers from the Federal Research Center of Nutrition, Biotechnology and Food Safety in Russia conducted a randomized controlled double-blind crossover trial with 101 adults diagnosed with metabolic dysfunction-associated steatotic liver disease (MASLD), a condition often linked to obesity and diabetes. Participants consumed vanilla ice cream sweetened with sugar, brazzein, or brazzein combined with inulin. Both brazzein-sweetened versions halved the blood sugar spikes compared to sugar-sweetened ice cream, with reductions being even more pronounced in participants with type 2 diabetes. Brazzein, originally found in a West African fruit and now produced by engineered fungi, is naturally processed by the body and is stable across various temperatures and acidity levels, making it suitable for diverse food applications.
