AI Enhances Food Safety by Improving Outbreak Detection and Recall Efficiency
Artificial intelligence (AI) is significantly improving food safety by enabling faster and more targeted approaches to detecting and managing foodborne outbreaks. Willette M. Crawford, a food science consultant and cofounder of Katalyst Agricultural Solutions, highlights that AI tools are not directly detecting pathogens but are crucial in identifying them more quickly within the system. This technology connects information from various databases and physical paperwork, automating workflows and processes. This allows food safety professionals to dedicate less time to data assembly and retrieval and more time to interpreting information, conducting investigations, and focusing resources where risk truly exists. The integration of AI, particularly through whole-genome sequencing networks, helps make connections across different systems and states, thereby accelerating the identification of recalls and the scope of outbreaks.
