Aspen, Colorado, has implemented a comprehensive composting policy that mandates all restaurants to either donate or compost their food waste. This initiative, which began in October 2023, has led to a significant increase in the amount of organic waste processed at the local compost facility. The policy aims to reduce methane emissions, a potent greenhouse gas, by diverting food waste from landfills. Methane is known to trap 80 times more heat than carbon dioxide over a 20-year period.
