Listeria Monocytogenes Detected in Commercial Snail Caviar, Highlighting Food Safety Concerns
Research into commercially produced snail caviar has identified the presence of bacteria from the Listeria genus, with Listeria monocytogenes confirmed in samples of the finished product. This finding emerged from studies examining Cornu snail eggs at various stages of commercial production. While other pathogens like Salmonella and coagulase-positive staphylococci were not detected in the final product, the presence of Listeria monocytogenes underscores the critical importance of stringent processing controls in the production of this specialty food item. The research indicates that proper sanitation, temperature control, microbiological testing, and shelf-life validation are essential to ensure the safety of commercially produced snail caviar. This also serves as a warning against consuming wild or garden snail eggs, as they do not undergo controlled harvesting and processing, making them unsafe to eat.
