San Antonio Food Bank Offers Budget-Friendly Healthy School Lunch Solutions Amid SNAP Changes
Stricter federal and state Supplemental Nutrition Assistance Program (SNAP) changes have reduced the number of students eligible for free school lunches, significantly impacting families in the San Antonio area. North East ISD, for instance, saw 30 of its campuses lose the free meals program. In response to these changes, the San Antonio Food Bank is providing guidance to families on how to pack healthy and affordable school lunches. Luis Ricardo Crompton, a nutrition education coordinator with the San Antonio Food Bank, demonstrated several lunch options that combine inexpensive ingredients with lean protein and vegetables. One suggestion is a three-bean salad, which offers a source of lean protein and helps reduce reliance on foods high in saturated fat. For children who may not prefer beans, Crompton recommended a vegetable wrap made with celery, onions, carrots, Swiss or mozzarella cheese, and low-sodium smoked turkey.
