New ZOE Score Redefines Ultra-Processed Food Risks, Challenging Traditional Classifications
New research from ZOE, led by Professor Tim Spector and Professor Sarah Berry, is challenging the traditional NOVA classification of ultra-processed foods (UPFs) by introducing a more nuanced 'Processing Food Score.' While the NOVA system broadly classifies 60% of U.S. and UK diets as UPF, the ZOE score identifies only about 25% of calories consumed as 'high-risk' processed food. This new score incorporates three key features: the number and potential health risk of additives, the energy intake rate (how fast food is eaten), and the hyperpalatability index (the 'bliss point' of fat, salt, and sugar combinations).
