Brooklyn's Queen Ann Ravioli Preserves Tradition with Century-Old Pasta Machine
Queen Ann Ravioli & Macaroni, a staple in Brooklyn's Little Italy since 1972, continues to thrive by using a pasta press from 1909. Managed by George Joseph Switzer III, the shop offers a wide variety of pasta, including 25 types of ravioli and 50 different cuts. Despite challenges from larger pasta brands, the business maintains its niche by focusing on quality and tradition. Switzer, who took over the business in the late 80s, emphasizes the importance of maintaining the old machinery, which he repairs himself. The shop produces up to 2,000 boxes of ravioli daily, with a significant portion of its business being wholesale.
