Crafting the Designer Grain
CSIR-NIIST has developed 'Designer Rice' using innovative food-processing technology, not genetic modification. The process begins by transforming broken rice, typically a lower-value byproduct, into a nutritional powerhouse. This broken rice is finely ground into flour and then meticulously blended with essential proteins and micronutrients such as iron, folic acid, and Vitamin B12. This enriched mixture is then reformed into grains that perfectly mimic the appearance, texture, and taste of conventional rice. This 'food architecture' approach ensures that the new rice is indistinguishable from its traditional counterpart in sensory qualities while offering vastly superior nutritional benefits, making it an easy dietary upgrade.
Enhanced Nutritional Profile
Designer Rice boasts a dramatically improved nutritional profile compared to standard rice. It features a Glycaemic Index (GI) below 55, meaning it releases energy gradually, which is crucial for individuals managing diabetes and preventing sudden blood sugar surges. The protein content sees a substantial increase, rising from a typical 6-8% in regular rice to over 20% in this new variety. Furthermore, it acts as a potent defense against anaemia by incorporating iron, folic acid, and Vitamin B12 directly into the grain's structure. This fortification ensures that consumers receive vital nutrients with every serving, effectively bridging nutritional gaps without requiring a change in eating habits.
