Growers and the American Pecan Council. From Pistachio Dates Kunafa to rich Sheer Khurma, these easy festive treats beautifully bring together tradition and indulgence.
Pistachio Dates Kunafa By Chef Bristi Kumari On Behalf of American Pistachio Growers
Ingredients
¼ cup American pistachios
100 gm thin roasted vermicelli
3 tbsp condensed milk
200 gm dates
Chopped pistachios for garnish
Melted dark chocolate for drizzling
Method
Crush the thin vermicelli and roast it in 1 tsp ghee until lightly golden.
Blend the American pistachios into a smooth paste.
In a bowl, combine the pistachio paste, roasted vermicelli and condensed milk. Mix well to prepare the kunafa filling.
Carefully deseed the dates and fill each one with the prepared mixture.
Garnish with chopped pistachios.
Drizzle melted dark chocolate on top. Serve and enjoy.
Sheer Khurma recipe by Chef Neha Deepak Shah On Behalf of American Pecan Council
Ingredients
¼ cup ghee
⅓ cup chopped American pecans
2 tbsp chopped raisins
½ cup roasted seviyan
3–4 cardamom pods
Sweetener of your choice
500 ml milk
2–3 tbsp chopped kharek
Cardamom powder
Method
Heat ghee in a pan and roast the chopped American pecans and raisins until lightly fragrant. Set aside.
In the same pan, add cardamom and seviyan. Roast on a low flame for 4–5 minutes until golden.
Add chopped kharek, milk and sweetener. Cook on low heat until the mixture thickens slightly.
Add the roasted pecans and cook for a few more minutes, stirring continuously.
Garnish with rose petals and extra chopped pecans. Serve hot and enjoy.
