Here are three cranberry drink recipes ideal for Christmas and New Year
Cranberry Panna Cotta
Ingredients
• US cranberry juice – 1 cup
• Fresh cream – 250 ml
• Sugar – 100 g
• Gelatin – 20 g
• Dried cranberries – a few (for garnish)
Method
• In a saucepan or deep pan, take cranberry juice and sugar. Heat on a moderate flame and add gelatin. Strain and allow it to cool.
• In another pan, heat the cream with sugar. Ensure the sugar dissolves completely, then add gelatin. Strain and allow it to cool.
• Take a glass and first add the cranberry mixture. Set it in the refrigerator.
• Top it with the cream mixture and repeat the process one more time.
• Set in a chiller, garnish with dried cranberries, and serve chilled.
Cranberry Kombucha
Ingredients
• Kombucha base or SCOBY – 5 litres
• US cranberries – 80 g
• Fresh mint – a few leaves
Method
• Chill the kombucha base.
• Pour it into chilled serving glasses.
• Add cranberries and mint.
• Serve immediately.
Cranberry Raspberry Smoothie
Ingredients
• Dried cranberries – 3.5 oz
• Cranberry juice – 1⅓ cups
• Organic lime – 1
• Fresh raspberries – 5 oz
• (Alternatively, frozen raspberries, defrosted)
• Kefir – 5 oz
• Vanilla sugar – 2 packets
• Melissa or mint – for decoration
Method
• Cook the cranberries and cranberry juice for 4 to 5 minutes without a lid. Cover and leave to cool overnight.
• Wash the lime, grate off the peel, and squeeze out the juice. Press the raspberries through a sieve.
• Add the cranberries with liquid, lime peel and juice, raspberry purée, kefir, and vanilla sugar into a blender. Blend well on the highest setting.
• Pour into glasses and serve, decorated with melissa or mint.
