- 1 litre of milk
- 1 tablespoon of ghee
- 4-5 tablespoons of sugar (or to taste)
- ½ teaspoon of cardamom powder
- 2-3 tablespoons of chopped cashews and almonds
- a few strands of saffron (optional)

How To Make ‘Makhana Kheer’?
- Begin by heating a tablespoon of ghee in a pan and roasting the makhana on a low flame until they turn crisp and lightly golden.
- Break one to check; if it snaps easily, it is perfectly roasted.
- In a separate pan, bring the milk to a boil, then lower the flame and let it thicken gently.
- Add the roasted makhana and allow them to cook in the milk for 10-12 minutes. The makhana will soften, swell, and release their flavour into the milk.
- Next, add the cashews, almonds, raisins, and cardamom powder.
- If you prefer, stir in a little saffron milk for extra aroma and colour.
- Let the kheer simmer for another 5-7 minutes until it thickens slightly.
- Reduce the heat, add the sugar, and stir for a minute or two until it dissolves but do not overcook after adding sugar.
