The holiday season calls for recipes that feel indulgent yet a little bit wholesome, and this paneer burger with homemade atta buns fits the bill perfectly. Imagine soft, nutty whole-wheat buns hugging
a spiced, golden-crisp paneer patty, layered with fresh salad, cheese, and a zesty mayo or chutney – comfort food with a desi twist.
These burgers are ideal for Christmas and New Year house parties, game nights, or cosy family dinners, where everyone can assemble their own. They also slide neatly into school and office lunchboxes in January, offering a fun break from regular roti-sabzi without being overly greasy.
Paneer and Mint Atta Burger
Ingredients:
• Harvest Gold Atta Burger Bun – 1
• Crumbled paneer – ½ cup
• Chopped spinach – 2 tbsp
• Mint leaves – 1 tbsp chopped
• Black pepper – ½ tsp
• Salt – to taste
• Olive oil – 1 tsp
• Tomato slices – 2
• Yogurt-mint spread – 1 tbsp
Method:
- Step 1: Prepare the Patty Mixture
Crumble the fresh paneer into a bowl. Finely chop a handful of fresh spinach leaves (about ½ cup) and 2 tbsp mint leaves, then add them to the paneer. Season with ½ tsp salt, ¼ tsp black pepper, and a pinch of cumin powder for extra flavor. Mix thoroughly with your hands until it binds like a dough—if too crumbly, add 1 tsp yogurt or water. Divide into 4 equal portions and gently shape into ½-inch thick patties, pressing firmly to hold shape without cracking. - Step 2: Cook the Patties
Heat a non-stick pan over medium heat and add 1 tsp olive oil. Place patties in the pan, cooking 3-4 minutes per side until a golden-brown crust forms and edges crisp up. Flip carefully with a spatula; internal paneer should soften without fully melting. Remove and set aside on a plate—keep warm. - Step 3: Toast the Atta Buns
Slice 4 atta buns horizontally. Heat the same pan (or a toaster) and lightly toast cut sides for 1-2 minutes until golden and crunchy, adding a brush of butter or ghee for richness. - Step 4: Assemble the Burger
Generously spread yogurt-mint sauce (blend yoghurt, mint, garlic, salt) on the bottom bun. Place a hot patty on top, then layer 2-3 thin tomato slices for juiciness and freshness. Add optional lettuce, onion rings, or a cheese slice. Cap with the top bun, pressing gently. - Serve immediately as a refreshing, protein-packed burger—pairs perfectly with fries or salad for holiday parties or lunch boxes!
