Almond Broccoli Soup

INGREDIENTS
- Water As Required
- Salt As Per Taste
- 1 Bowl – Broccoli
- 7–8 cloves – Garlic
- 1/2 Tbsp – Ginger
- 1 Tbsp – Celery
- 1/2 Cup – Almonds (Soaked)
- 300 ml – Milk
- A pinch of Black Pepper Powder
- Salt As Per Taste
METHOD
- Blanch the broccoli in boiling water that has been generously salted. Once it turns a bright green, set the broccoli aside to cool a little.
- Add the blanched broccoli, along with chopped garlic and ginger, celery, almonds and milk, to a mixer jar. Blend it till it has turned into a smooth purée.
- Transfer this purée to a saucepan. You can add water, chicken or vegetable broth as required to the pan to get it to a consistency that you would like. Some like a thicker soup, others might prefer it to be more sippable.
- Adjust the taste of the soup by adding some cracked black pepper and salt. Mix well and let it come to a simmer.
- Serve the soup hot and with a garnish of fresh cream and almond flakes.
- If you want some crunch, add a few croutons or make it into a fulfilling meal by adding a side of salad.
