Ingredients
4 cups fresh Chilean cherries, divided
½ teaspoon lemon zest
1–2 teaspoons sugar (optional)
2 cups chilled heavy cream or Greek yogurt
2 teaspoons vanilla extract
1 teaspoon agave nectar or powdered sugar
Fresh mint leaves and whole cherries, for garnish
Method
Pit 1 cup of cherries and blend with lemon zest and sugar to make a smooth sauce.
Whip the chilled cream (or Greek yogurt) with vanilla and agave nectar until light and fluffy.
In serving glasses, layer the cream, cherry sauce, and remaining fresh cherries. Repeat the layers.
Garnish with mint leaves and whole cherries. Serve immediately or chill for 15–20 minutes.

Ingredients
1 ready-made sponge or angel food cake
2 cups fresh Chilean cherries, pitted and halved
1 cup heavy cream, chilled
1–2 tablespoons powdered sugar
1 teaspoon vanilla extract

Method
Whip the chilled cream with powdered sugar and vanilla until soft peaks form.
Slice the cake horizontally into two layers.
Spread a layer of whipped cream over the base, then scatter the fresh cherries evenly.
Place the top layer back on and cover with the remaining cream.
Decorate with fresh cherries and chill for 20 minutes before serving.
