However, give a Valentine’s Day twist to the cookies by stuffing them with chocolate. This small change will make for gooey, fudgy cookies that are best eaten with ice cream. Forget store-bought cookies because these thick giants, oozing melty cookies, transform simple baking into an edible love letter. At 3-4 inches wide, each cookie boasts a crisp golden exterior giving way to a gooey, chewy core stuffed with premium dark chocolate squares that burst on the first bite.

Molten Scoop Cookies Recipe
Ingredients:
100 g – butter
45 g – caster sugar
50 g – brown sugar
1 – egg
1 tsp – vanilla
200 gms – flour
1 tbsp – cornflour
1 pinch – salt
1/2 tsp – baking powder
1/4 tsp – baking soda
chocolate chips as required
Method:
- In a large bowl beat together the butter and sugars till smooth, pale & fluffy
- Add in the egg and vanilla. Mix till well combined
- Add all the remaining ingredients and make a medium soft cookie dough
- Now scoop out 7 to 8 balls of the cookie dough, flatten & stuff with more chocolate chips
- Arrange in a steel tin lined with parchment paper
- Freeze for at least 30 minutes or overnight
- Bake at 180C for 10 to 15 min till the cookies spread & get golden/crisp from the top
- Top with sea salt & serve with ice cream & chocolate ganache
