Soup season is here! With the delayed rains making their presence felt across the country, the cold, dreary weather can only be uplifted with a bowl of hot soup. This season, skip the hot and sour or tomato
soup, and try something new. This corn soup is super easy to make and can be customised to your liking. Add a protein or hide extra vegetables from your kids to make a meal that is nutritious and will support your immune health in the monsoon. Serve it with toasty bread, a crusty sandwich, a salad or even noodles or pasta for a meal that will keep you and your family satiated.

Sweet Corn Soup
Ingredients:
- Boiled Sweet Corn Puree β 1 Cup
- Boiled Sweet Corn kernels β 1/4 Th Cup
- Ginger β 1β inch
- Garlic β 4 Cloves
- Green Onion β 2 Bulbs
- Butter β 1 Tbsp
- Oil β 1 Tbsp
- Stock Cube/ Maggie Veg cube- 1 no
- Salt & Pepper β to Taste
- Carrot β 1/2 no
- French Beans β 10-12 nos
- Water β 1 cup or as required
- Corn Starch β 2 Tsps
- Water β 1/4th Cup
- Vinegar β 1/2 Tsp
- Soy Sauce β Garnish
- Chilli Oil β Garnish
- Green Onion β Garnish
Method:
* Start by boiling the sweet corn β I halved my whole sweet corn & pressure cooked it for 4 whistles
* Cut the kernels & purΓ©e 1 cup of corn with some water while reserving 1/4th cup of whole kernels
* To a saucepan, heat up some oil & butter β add in the aromatics β finely chopped garlic, green onion bulb & grated ginger β cook on high for a minute
* Add in the corn purΓ©e along with the stock cube & cook it for 3-4 mins followed by finely chopped carrots & french beans
* Adjust the consistency of the soup with 1 cup of water, season with salt & white pepper, reduce the heat to a simmer β cover the pot & cook the soup for 5-6 minutes
* Add in the cornstarch slurry along with whole corn kernels, a dash of vinegar, a crack of black pepper & a handful of green onion leaves β stir well & simmer for another 3-4 minutes/ until the cornstarch cooks
* Serve hot, Garnish with some soy sauce, chilli oil & green onions & Enjoy
