2. Castle Hill Dark Knight Small Batch Whiskey
The journey of Dark Knight Whiskey continued under the guidance of John McDougall, a titan in the world of alcoholic beverages. A maturation unit was established on-site in Assam, where fresh malts and proprietary grain spirits crafted from broken rice and locally sourced corn began their ageing journey.
Through this compounding of expertise, Castle Hill Dark Knight Small Batch Whiskey (2 Years) was launched in 2019, followed by the 4-Year Small Batch Whiskey in 2021. Crafted following the tenets of American whiskey and bourbon traditions, the process includes fermentation of a mash comprising 51% locally sourced maize, distillation, charcoal filtration, and maturation in charred new American oak casks for two and four years respectively.
