This besan sheera doodh is a simple, warming drink made with everyday Indian pantry staples such as besan, milk, almonds, haldi, saunth, black pepper and elaichi. The combination of these ingredients makes it a comforting addition to your monsoon routine, while the spices are traditionally valued for their warming and soothing properties. Easy to prepare in just one pan, this Indian immunity-boosting drink is perfect for sipping warm on a rainy evening or whenever you want a nourishing, homemade beverage.

Besan Sheera Doodh Recipe
Ingredients:
* 1 tsp ghee
* 1 tbsp besan
* 1 cup milk
* 1 tsp sugar-free sweetener
* 1 tsp crushed almonds
* Pinch of salt
* Pinch of black pepper
* Pinch of saunth
* Pinch of elaichi powder
* Pinch of haldi
* Chopped nuts for topping
Method:
- Roast the besan: Heat ghee in a small, heavy-bottomed pan over low heat. Add the besan and roast it slowly, stirring continuously, until it turns golden and releases a nutty, fragrant aroma. Be careful not to cook it on high heat, as besan can burn quickly.
- Add the almonds: Add the crushed almonds and roast them with the besan for another 20–30 seconds, stirring well to combine.
- Pour in the milk: Lower the heat and gradually add the milk while stirring continuously with a whisk or spoon. Adding the milk slowly helps prevent lumps from forming.
- Add the spices and sweetener: Once the milk is well incorporated, add the sugar-free sweetener, salt, turmeric, dry ginger powder (saunth), black pepper and cardamom powder.
- Stir well so that all the ingredients are evenly combined.
- Simmer until smooth: Allow the mixture to cook on low to medium heat, stirring occasionally, until it becomes smooth and slightly thickened. Let it come to a gentle boil, then turn off the heat. Avoid overcooking, as the sheera will continue to thicken slightly as it cools.
- Garnish and serve: Pour the warm besan sheera doodh into a serving glass or bowl and garnish with chopped nuts.
- Serve warm for a comforting, fragrant drink that combines the nutty flavour of roasted besan with the warmth of cardamom, saunth, black pepper and turmeric.
