SIZZLING GARLIC CHILLI NOODLES RECIPE
Ingredients:
– 2 spring onions, chopped
– 4 cloves garlic, finely chopped
– 2 – 3 red chillies, chopped
– 1/2 tsp Korean chilli flakes (Gochugaru)
– 3 tbsp rice bran oil
– 2 tbsp vegetarian oyster sauce
– 1.5 tbsp light soy sauce
– 1 tbsp rice vinegar
– 1 tsp sugar
– ½ tbsp sesame oil
– Coriander, to garnish
Method:
- Cook the noodles: Bring a pot of salted water to a boil and cook your noodles according to package instructions until just tender. Drain and rinse briefly under cold water to stop the cooking and keep them from turning mushy. Set aside in a colander while you prepare the sauce.
- Make the hot‑oil sizzle base: In a heatproof bowl (preferably medium‑sized), place the chopped spring onions, garlic, red chillies, and Korean chilli flakes. Heat the rice bran oil in a small pan over medium heat until it’s hot but not smoking. Carefully pour the hot oil over the aromatics in the bowl—it should sizzle loudly and release a fragrant, spicy‑garlicky aroma. Stir once to combine; the heat will gently soften the spring onions and chillies while keeping the garlic bright and not burnt.
- Build the sauce: Add the vegetarian oyster sauce, light soy sauce, rice vinegar, sugar, and sesame oil to the hot‑oil mixture. Stir well until the sugar dissolves and the sauce is glossy and evenly blended. Taste and adjust: add a pinch more sugar if too sharp, or a splash more soy sauce if you want it saltier. Let the mixture cool slightly so it doesn’t clump the noodles when tossed.
- Finish and serve: Add the cooked noodles to the bowl with the sauce and toss thoroughly until every strand is coated in the savoury, slightly spicy, garlicky dressing.
