Recipes
Potazos Masala Corn Canapés
For the topping:
Take a large microwave-safe bowl.
Add 1 cup sweet corn.
Add 1 tbsp finely chopped red onion.
Add 1 tbsp diced red and yellow bell peppers.
Add 1 tsp finely chopped green chillies (adjust to taste).
Add a few drops of lemon juice.
Add chopped coriander leaves.
Add ½ tsp salt (adjust to taste).
Add ⅓ tsp red chilli powder and black pepper each.
Add 1 heaped tbsp grated cheese.
Pour in ¼ cup milk.
Mix well and microwave for 1 minute until the cheese melts.
Assembly:
Arrange Britannia 50-50 Potazos on a serving dish.
Spoon the corn mixture onto each biscuit.
Serve immediately.
Sabudana Tikki Cups
Ingredients:
1 cup soaked sabudana
2 boiled potatoes, mashed
¼ cup roasted peanuts, crushed
1 green chilli, finely chopped
1 tsp cumin seeds
Salt to taste
Chopped coriander
½ cup thick yoghurt
Method:
Mix sabudana, potatoes, peanuts, cumin seeds, chilli, coriander, and salt.
Shape into small cup-like forms and place in greased moulds.
Cook (grill/microwave) until crisp outside and soft inside.
Fill with chilled yoghurt and garnish before serving.
Millet Kesari (Gudi Padwa Special)
Ingredients:
½ cup millet
1 cup sugar
1½–2 cups water
½ tsp cardamom powder
3 tbsp ghee
2 tbsp cashews
2 tbsp raisins
Pinch food colour (optional)
Method:
Roast millet, cool, and grind to a semolina-like texture.
Fry cashews and raisins; set aside.
Cook millet with hot water until soft.
Add sugar and mix well.
Add ghee, cardamom, and colour; cook until thick.
Mix in dry fruits and serve warm.
Biscotti Rabri Fusion (Eid Special)
Ingredients:
Biscotti sticks
2 cups thickened milk (sweetened with jaggery or honey)
Cardamom powder
Method:
Prepare thickened milk and flavour with cardamom.
Serve warm with biscotti on the side.
Dip and enjoy.
