The key is to remove excess moisture before storing them and choose a storage method that preserves their flavour and aroma.
Method 1: Lightly Crisp The Leaves Before Storing
A simple way to extend the life of curry leaves is to remove residual moisture by lightly crisping them.
Start by washing the leaves thoroughly and patting them completely dry with a clean kitchen towel. Once dry, place them in an air fryer or microwave for a minute or two, just until they become slightly crisp. If you don’t have either appliance, a non-stick pan works just as well.
Allow the leaves to cool before transferring them to an airtight container. This method helps reduce moisture buildup and can keep the leaves usable for a much longer period.
Method 2: Freeze Them In Ice Cubes
If you want to store curry leaves for several weeks or even months, freezing is a great option.
Remove the leaves from their stems, wash them, and dry them thoroughly. Place a few leaves into each compartment of an ice cube tray and fill the tray with water so the leaves are fully submerged. Freeze until solid.
