With mango season already in full swing across India this summer, there’s no better time to bring back the classic aam panna, a refreshing, centuries‑old drink that has cooled homes long before air conditioners
arrived. Made from raw or ripe green mangoes, this tart, lightly spiced sharbat is a staple in Indian households, especially on hot afternoons and festive summers.
Aam panna isn’t just delicious; it’s naturally cooling, loaded with electrolytes, and known to help beat dehydration and fatigue when the mercury soars. Families have passed down versions of this recipe for generations, tweaking the sweetness, salt, and spices to suit local tastes, yet the core idea remains the same: a simple, homemade drink that refreshes the body and ties people to tradition.

Raw Mango Panna Recipe
Ingredients:
- 3raw mangoes
- Water to cook
- 1/4th cup mint leaves
- 1 tsp Rock salt
- 1 tsp Roasted jeera powder
- 1/4th tsp of red chilli powder
- Salt to Taste
- Pinch of MSG
- 1 tbsp lime juice
- 1/2 cup sugar
- 1/4th cup water
- Soda to top
- Chilli and Salt Rim on glass
- Lots of ice
- Mint leaves for garnish
Method:
•Pressure cook the raw mangoes for 2-3 whistles.Let them cool down
•Once cooled down scoop out the pulp from the raw mangoes
•In a blender add the raw mango pulp along with mint leaves, rock salt, jeera powder, red chili powder, salt and lime juice. Blend along with 2 ice cubes into a smooth paste
•Make a simple syrup using sugar and water. Mix until the sugar completely dissolves in water
•Mix the raw mangoe mixture with the prepared simple syrup in a pan and cook for about 2-3minutes. Take the pan off the heat and add MSG to it. Stir everything to combine well
•combine red chili powder and salt together.Apply lime juice on the rim of the glass and dip in the salt and chili mixture
•Add the aam panna mixture to the glass and top it up with lots of ice and chilled soda. Garnish with mint spring and slice of raw mango
