good news? You can recreate that same crunch at home with a much healthier twist—using bitter gourd (karela).
It might sound surprising, considering karela’s naturally bitter taste, but with the right method, you can turn it into crispy, flavour-packed chips that even kids will enjoy.
Why Try Bitter Gourd Chips?
Bitter gourd is packed with nutrients and is often included in adult diets for its health benefits. However, its bitterness makes it unpopular with children. Transforming it into crunchy, spiced chips is a smart way to make this vegetable more appealing—without compromising on taste.
Ingredients You’ll Need
To make these crispy karela chips, keep the following ingredients ready: Thinly sliced bitter gourd (about 250 grams), gram flour (besan), rice flour, cornflour, turmeric, red chilli powder, coriander powder, salt, and either dry mango powder or a dash of lemon juice. You’ll also need oil for frying.
How To Make Karela Chips
Start by slicing the bitter gourd into thin, chip-like rounds and removing the seeds. To tone down the bitterness, coat the slices with salt and lemon juice and let them rest for 15–20 minutes. After that, gently squeeze and rinse them. This step helps significantly reduce the sharp bitter taste.
In a bowl, mix gram flour, rice flour, and cornflour with a little water to form a light coating. Add the spices and toss the bitter gourd slices well so they are evenly coated. Make sure not to add too much water—the coating should be light and just enough to stick to the slices.
Heat oil on a medium flame and fry the coated slices in small batches. Cook until they turn golden brown and crispy. Once done, place them on a tissue to absorb excess oil.
For an extra burst of flavour, sprinkle a little chaat masala on top before serving. If you want even more crunch, you can add sesame seeds to the coating mixture.
These crispy bitter gourd chips are flavourful, crunchy, and far healthier than regular potato chips. Serve them as an evening snack or a side, and you might be surprised to see even picky eaters finishing the plate.
