Spinach and Cottage Cheese Steam Toss
Ingredients
- 2 cups spinach leaves, blanched & chopped
- ½ cup cottage cheese (paneer), crumbled
- 1 tsp grated garlic
- Juice of ½ lemon
- Salt and crushed pepper to taste
Method
- Wash spinach thoroughly, blanch for one minute until wilted, drain well, cool slightly, then squeeze firmly to remove excess moisture.
- Crumble fresh paneer evenly in a bowl, add chopped spinach and grated garlic, gently mixing to maintain soft texture throughout.
- Season with salt and crushed pepper, drizzle lemon juice gradually, tossing slowly so flavours distribute evenly without overpowering any ingredient.
- Steam toss mixture covered on low heat for two minutes, allowing warmth to develop while preserving nutrients, colour, and taste.
Foxtail Millet & Winter Veg Khichdi
Ingredients
- ½ cup foxtail millet, soaked 20 mins
- ½ cup carrot, beans & bottle gourd mix
- ½ tsp turmeric
- Salt to taste
- 2 cups water
- Fresh coriander
Method
- Combine all ingredients in a pressure cooker, add water, close the lid securely, and cook on medium heat for three whistles.
- Once cooking finishes, allow pressure to release naturally, rest for five minutes undisturbed, then open the lid carefully and gently fluff.
- Garnish the dish with preferred toppings, mix lightly, and serve hot immediately as a comforting, wholesome meal for winter days.
Tomato and Beetroot Detox Soup
Ingredients
- 1 cup beetroot, chopped
- 2 tomatoes, chopped
- 1 small onion, chopped
- 1 garlic clove
- 1½ cups water or vegetable stock
- Salt & pepper to taste
Method
- Add all ingredients to a pot with water, bring to a boil, then simmer gently until vegetables soften completely and flavours develop.
- Allow mixture to cool slightly, then blend until smooth, creamy, lump-free soup using a blender or hand mixer.
