Mumbai is a city that never sleeps, and there is always somewhere to go, something to do and a cosy eatery open till late at night serving food that is finger-licking good. The city’s culinary landscape
is changing day by day. There are new spots opening up regularly, which are experimenting and getting creative with nostalgic favourites or serving up foods that are relatively unheard of. We look at some of the newest restaurants that have opened in Mumbai for the month of May.
Staqx

Staqx is the new diner concept from Chef Beena Noronha and is a space where the familiar flavours meet the energetic spirit of 1980s diner culture. This 14-seater comfort food spot is built around indulgence; generous portions, satisfying combinations, and food that is meant to be enjoyed without restraint. The menu spans sandwiches, milkshakes, sundaes, coffee, and more, each approached through a chef-driven lens that brings sharper flavour contrasts and a distinct point of view to formats that feel instantly familiar. It is a space created not simply to serve food but to draw people into a mood.
The name Staqx reflects the thinking behind the brand. Every element — the food, the design, the atmosphere — is built by stacking layers of flavour, texture, and personality together to create something more memorable than any one part on its own. The interiors take cues from the diner culture of the 1980s — lively, music-filled hangouts that shaped much of the decade’s popular imagination. Neon signage, tiled surfaces, chrome accents, and a confident colour palette sit alongside contemporary lighting and layout to create a room that nods to the past while feeling completely current.

Varsoo

Helmed by Pinky Chandan Dixit, Varsoo is conceived as a deeply personal expression—one that gathers years of lived experiences, shared meals, and inherited recipes, and brings them together into a space designed for today.
At Varsoo, the familiar unfolds differently. The idea of traditional food gives way to a more intuitive way of eating: one that mirrors how we actually crave it. A single, comforting bowl of Moong dal khichdi, a Ravioli dal dhokli served almost like a pasta, or a complete meal of roti, shaak, and kadhi, each dish is designed to stand on its own, yet come together as part of a larger experience.

Monarchy

A space that goes beyond conventional dining, Monarchy offers a seamless blend of modern luxury, global vegetarian cuisine, and high-energy nightlife. Located in Andheri, it is envisioned as a versatile destination where guests can transition effortlessly from relaxed daytime dining to vibrant evenings. Whether it’s a casual lunch, an intimate dinner, or a lively night out, the space adapts to every mood, making it a compelling addition to the city’s hospitality landscape.
Neha, founder of Monarchy, along with Ankit Sharma, a key pillar of the brand, envisioned a space that reimagines vegetarian fine dining while catering strongly to Mumbai’s Jain and Gujarati audience. By blending global culinary influences with a pure vegetarian approach, they have curated a menu that is both diverse and indulgent, without compromise.
The menu offers a global culinary journey, featuring highlights like Fondue Genevoise, Tandoori Platter, sushi, crystal dimsums, and a vibrant Mezze spread. Complementing this is a curated beverage programme with signature cocktails like Spice of the Throne and The Queens Martini, alongside refreshing mocktails such as Purple Sting and Guava Inferno all crafted to deliver an elevated and inclusive experience.

Blending progressive Pan Asian cuisine with immersive design, Gong offers a dining experience inspired by sound, soul, and sensory detail. Speaking on the launch, Avik Chatterjee, Executive Director – Innovation & New Formats, shares, “Gong was created to feel familiar while offering new discoveries.”
Designed by Sumessh Menon Associates, the space follows the concept of ‘Asian [Sound] Soul’, translating the resonance of a gong into interiors. Earthy tones, brass accents, fluid forms, and three distinct zones create a calm, layered atmosphere.
The kitchen is led by Chef Sahil Singh, whose global experience shapes a menu rooted in technique and approachability.
At the heart of Gong is one of Mumbai’s most extensive sushi programmes, spanning nigiri, sashimi, uramaki, signature rolls, and omakase.
Premium seafood sourced from Japan and advanced freezing technology ensure exceptional freshness and consistency.
Gong is also among the first in India to spotlight Chuka and Itameshi within a Pan Asian format. The Chuka menu features comforting Japanese-style bowls such as Mapo Tofu rice, Dan Dan Udon, and Sake Duck Yakimeshi. The Itameshi section blends Japanese and Italian influences through dishes like Udon Carbonara, Udon Chilli Olio, and Wafu Pizza.

Located in Santacruz, Laguna seamlessly transitions from daytime coffee rituals to high-energy nightlife experiences. The space is rooted in Latin American culinary influences and culturally curated programming, offering a sensory, travel-inspired escape, right in the heart of the city.
Originating around the idea of coffee, cuisine, and culture, the menu at Laguna is a cohesive, all-day culinary journey across the American continent, moving from the fresh flavours of California and New York to the bold, vibrant spirit of Mexico and into the warm, coastal influences of Brazil, Argentina, Chile, and Colombia. Cafe Como Xo
The Kala Ghoda neighbourhood in Bombay has a certain rhythm to it, cafés tucked between art galleries, independent stores, and streets that invite you to slow down a little. It’s in the middle of this easy, lived-in charm that Cafe Como Xo has found its place, a warm, veg-forward café designed for long, unhurried meals.
Founded by first-time restaurateurs Meyuri Shethia and Charmi Ajmera, the café comes from years of travelling together, eating their way through cities, and bringing those experiences back home into their own kitchen.
The food here leans vegetarian but has a strong eggetarian identity, most dishes come with the option to add eggs, making the menu both flexible and inclusive without overcomplicating things. The menu, curated by Chef Vinayak Mhatale, brings together bowls, small plates and comfort classics without feeling overwhelming.
One of the more playful elements is the DIY ramen station. You can pick up your base, add toppings of your choice like edamame, broccoli, Tteokbokk, crispy nori and even a boiled egg, and build your own bowl, either yourself or with help from the staff. It adds a small moment of customisation that feels easy and unforced.
The matcha menu stands out too, even for those who don’t usually reach for it. The strawberry matcha and the cloud foam version are already early favourites, approachable, slightly indulgent, and likely to convert even the sceptics.

RumBabaa
Mumbai’s ever-evolving café culture has a new addition – one that doesn’t try to compete for attention, but quietly earns it. RumBabaa, an all-day coffee and vinyl-led space, opened its doors in Andheri on 26th April, bringing together specialty coffee, thoughtful food, desserts, music, and a sense of unhurried living.
At its heart, RumBabaa is built around a simple idea: good coffee, good music, and time well spent. Music takes on a more intentional role at RumBabaa, with a vinyl set-up at the heart of the space – where records play through the day. Inspired by Japanese minimalism, the space is warm, uncluttered, and quietly inviting.
The name RumBabaa is inspired by the classic dessert – a sponge cake traditionally soaked in rum and often paired with coffee. Over time, the name evolved to represent something more – a feeling that is comforting, playful, and gently indulgent.
The menu reflects a careful balance of mindful and indulgent. Mornings can begin with nourishing bowls like the Longevity Bowl, layered with overnight oats, almond milk, apple, cinnamon, and millet granola, or the Kodo Power Bowl with Greek yogurt, banana, cashew butter, and blueberry chia jam. There’s also a strong breakfast offering with dishes like the Rumbabaa Eggs with garlic lemon yogurt and beet harissa, the bold Krapow Omelette, and a comforting Tiramisu French Toast that leans into dessert-like indulgence.
As the day unfolds, the menu moves into more flavour-forward plates – from the crisp, textural Kataifi Prawns to globally inspired dishes like Bajra Tacos with jackfruit, and the comforting Peruvian Chicken Pot Pie. On the beverage side, the coffee programme is expansive yet thoughtfully curated, striking a balance between classic brews and more expressive, flavour-led creations. Signature drinks like the Dark Velvet Espresso Cold Coffee, Salted Caramel Espresso Oat Latte, and the Iced Black Sesame Latte (charcoal version) offer a playful take on everyday coffee, alongside refreshing options like the Mango Matcha with dehydrated mango.
Location: RumBabaa, Off New Link Rd, behind Yash Raj Studios back Gate, Industrial Area, Andheri West, Mumbai, Maharashtra 400053
