Made with buckwheat (kuttu) flour, this vrat-friendly dosa comes together in just a few minutes—no soaking or grinding required. Paired with a mildly spiced potato filling, it makes for a satisfying meal that is low on oil yet packed with flavour. Ingredients
For Dosa Batter
- 1 cup buckwheat (kuttu) flour
- 2 tablespoons yoghurt (curd)
- 1/2 teaspoon rock salt (sendha namak)
- 1/2 cup water
- 2 tablespoons oil
For Potato Stuffing
- 2 medium boiled potatoes, mashed
- 1 green chilli, finely chopped
- 1 teaspoon grated ginger
- 1/3 teaspoon cumin seeds
- 1/4 teaspoon black pepper powder
- Rock salt (sendha namak), to taste
- 1 tablespoon oil
How To Make Kuttu Vrat Dosa
Step 1: Prepare the Batter
In a mixing bowl, whisk together the buckwheat flour, yoghurt and water until you get a smooth, lump-free batter. Add rock salt, mix well and let the batter rest for about 5 minutes.
Step 2: Make the Potato Filling
Heat oil in a pan and add cumin seeds. Once they begin to crackle, sauté the grated ginger and chopped green chilli for a few seconds. Add the mashed potatoes, rock salt and black pepper, then mix everything well. Cook for 2-3 minutes before turning off the heat.
Step 3: Cook the Dosa
Heat a dosa tawa or non-stick pan and lightly grease it. Pour a ladleful of batter onto the pan and spread it into a thin, round dosa. Cook for about a minute, drizzle a little oil around the edges, then flip and cook until both sides turn golden and crisp.
Step 4: Assemble and Serve
Place 2 tablespoons of the prepared potato filling in the centre of the dosa. Fold it over using a spatula and serve hot with fresh curd or your favourite vrat chutney.
Quick Tips: You can also make this recipe using amaranth (rajgira) flour instead of buckwheat flour.
