Amit Aggarwal’s futuristic-meets-traditional vision extended to the cocktails, where mixologist Avinash Kapoli crafted a collection inspired by the French Alps and Indian flavours. From herb-laced martinis to floral spritzes, each drink carried couture-like finesse in liquid form.

Alpage Vert

Ingredients
Grey Goose Altius – 45 ml
Dry Vermouth – 20 ml
Herb Tincture – 8 dashes
Garnish – Pickled grape
Method – Stir Altius, vermouth, and tincture with ice until chilled. Strain into a martini glass and garnish with a pickled grape.
Sel des Cimes
Ingredients
Grey Goose Altius – 45 ml
Dry Vermouth – 20 ml
Jujube Brine – 40 ml
Garnish – Pickled jujube
Method – Stir ingredients with ice until perfectly blended. Strain into a chilled glass and garnish with a jujube.
Pomme en Altitude
Ingredients
Grey Goose Altius – 60 ml
Soda – 120 ml
Green Apple Dill Cordial – 50 ml
Garnish – Dill leaf
Method – Build in a highball glass with ice. Top with soda and garnish with fresh dill.
Éclat du Soir

Ingredients
Grey Goose Altius – 60 ml
Orange Aperitif – 15 ml
Jasmine Soda – 150 ml
Garnish – Banana leaf strip
Method – Pour Altius and aperitif over ice in a large wine glass. Top with jasmine soda, stir gently, and garnish with a banana leaf.
The evening also unveiled a bespoke couture barware collection by Amit Aggarwal. Sculptural stirrers and icy-blue vessels echoed the purity of glaciers – transforming even the act of serving a drink into a couture statement.
