How To Make Easy Rabdi At Home In 15 Minutes
Ingredients
- 400 ml sweetened condensed milk
- 100 g khoya or mawa
- 1 bowl chopped dry fruits such as almonds, cashews, pistachios and raisins
- 1 teaspoon cardamom powder
- A few strands of saffron, optional

Take a thick-bottomed pan and add the sweetened condensed milk, khoya and chopped dry fruits. Place the pan over low heat and keep stirring the mixture continuously. The condensed milk can stick to the bottom of the pan, so make sure you keep an eye on it as the mixture cooks. Stir gently until the khoya melts and blends well with the condensed milk.
Let the mixture cook on low heat for around 10 minutes, stirring regularly, until it thickens and develops a creamy consistency. Once it has thickened, add the cardamom powder and mix well. If you want to make it a little more festive, add a few strands of saffron for colour and aroma.
Take the rabdi off the heat once it reaches the desired consistency and allow it to cool. You can serve it at room temperature, but it tastes even better chilled. Transfer it to the refrigerator and let it cool before serving. When you’re ready to add it to your Janmashtami bhog, garnish it with chopped pistachios, almonds or a few saffron strands.
Since this recipe uses sweetened condensed milk, there is no need to add extra sugar. Give the rabdi a taste once it is cooked and adjust the sweetness only if required.
