Enter Ube (pronounced oo-beh), the Philippine purple yam that has crossed oceans to become the defining flavour movement of 2026. In fact, in 2025, Huda Beauty had launched their Ube collection in India, focusing on their love affair with lilac, before it trickled down to our food menus. With over 800K posts under #ube, the purple wave has moved beyond global hubs like New York and London and is now trickling into India’s most avant-garde cafes.
The Anti-Matcha: Why We’re Hooked
Unlike the “grassy” and often bitter profile of Matcha (which, to be honest, is an acquired taste), Ube is an immediate crowd-pleaser.
It’s mildly sweet with soft notes of vanilla and nuttiness, sometimes even compared to white chocolate or coconut. It is familiar yet looks otherworldly, and most importantly, “Instagrammable”.
That soft lavender-to-violet hue is 100% natural, powered by anthocyanins (the same antioxidants found in blueberries). It also offers the rare “health halo”, boasting Vitamin C and potassium, without sacrificing the picture-pretty factor.

While trends driven by social media can often feel fleeting, Ube’s combination of easy flavour and striking aesthetics gives it serious staying power. It lacks the polarising nature of its green predecessor, making it accessible to everyone from the hardcore foodie to the casual cafe-goer.
