Ingredients
1-1.5 litre litre fresh sugarcane juice
Half a cup of soaked rice (or broken rice)
Half cup Khoya/Mawa
2–3 tbsp ghee
8–10 cashews
8–10 almonds, chopped
1 tbsp raisins
4–5 green cardamom pods, crushed
How To Make Sugarcane Juice Kheer
Step 1: Wash and soak the rice for about 20–30 minutes. In a heavy-bottom pan, add the sugarcane juice and bring it to a gentle boil. While boiling the sugarcane juice, skim off the foam and impurities from the top regularly for a clearer, cleaner flavour.

Step 2: Add the soaked rice and cook on a low flame until the rice turns soft.
Step 3: Once the rice is nearly cooked, add Khoya/Mawa gradually while stirring continuously.
Step 3: Simmer until creamy. Let the mixture cook on low heat until it thickens into a creamy kheer consistency. Stir occasionally to avoid sticking.
Step 4: Prepare the garnish: In a separate pan, heat ghee and lightly roast cashews, almonds, and raisins until golden.
Step 5: Finish and serve: Add the roasted dry fruits and cardamom to the kheer. Mix well and switch off the flame.
