Former actress Sameera Reddy, known for her commitment to fitness, has shared a unique recipe for a healthier chocolate brownie, incorporating lauki, or bottle
gourd. This creation aims to offer a rich, chocolatey experience that also leaves one feeling good post-consumption. The recipe begins with grating fresh lauki and gently squeezing out excess water, ensuring it remains soft and moist. This prepared gourd is then blended with powdered jaggery, creamy peanut butter, milk, a neutral oil, and vanilla extract to create a smooth, wet base. In a separate bowl, dry ingredients are combined: either maida or oat flour, unsweetened cocoa powder for that deep chocolate flavor, baking soda and baking powder to ensure a good rise, and a pinch of salt to enhance all the tastes. These dry components are then thoroughly mixed into the wet batter, followed by the addition of chocolate chips for bursts of extra chocolatey goodness. The resulting batter is poured into a prepared baking tray, either greased or lined with parchment paper, and baked at 180 degrees Celsius for approximately 25 to 30 minutes until a skewer inserted comes out clean. Reddy suggests letting the brownies cool slightly before cutting them into individual servings, promising a delightful and nourishing treat.
Nutritional Insights on Lauki
Nutritionists highlight the remarkable ability of lauki to enhance the moisture content in baked goods like brownies, making it an ideal ingredient. Aditi Prasad Apte, a Senior Clinical Nutritionist, explains that lauki, a staple in traditional Indian diets, is exceptionally low in calories and comprises about 90 percent water. This high water content is key to its effectiveness in providing a moist texture to baked items. While lauki excels at adding moisture, Apte clarifies that it cannot completely replace the role of fats like butter or oil, which are crucial for richness, mouthfeel, and structural integrity. Instead, it functions best as a partial substitute, effectively reducing the overall fat content of the brownies while still contributing to a soft, fudgy consistency. This makes the brownies a more wholesome option without sacrificing texture.
Weight Management & Healthier Indulgence
Ginni Kalra, Head of Dietetics at Aakash Healthcare, suggests that lauki brownies can be a suitable dessert option, particularly for individuals focused on weight management or maintaining a balanced diet while still satisfying a sweet craving. Beyond moisture, the incorporation of lauki significantly elevates the nutritional profile of the brownies. Apte elaborates that lauki boosts the fiber content, lowers the calorie density, and introduces essential micronutrients, including potassium and antioxidants. These additions contribute to a more balanced dessert that has a reduced glycaemic impact and promotes greater satiety. While not transforming the brownies into a superfood, this modification undoubtedly makes them a far healthier indulgence when compared to traditional brownie recipes, offering a guilt-free way to enjoy a classic treat.
