A Culinary Vision Unveiled
In the heart of Mumbai's vibrant Kala Ghoda art district, a new culinary destination named Portal has opened its doors, aiming to revolutionize the all-day
dining scene. This 1,200 sq ft bistro and bar, brought to life by Punam H. Singh, a seasoned hospitality entrepreneur, is designed to cater to the diverse needs of the neighbourhood's eclectic mix of art enthusiasts, shoppers, and professionals. Singh’s inspiration stemmed from a simple yet profound observation: the lack of a place where one could enjoy a celebratory drink like champagne with their morning meal. Portal aims to fill this gap, proposing a departure from the conventional cafe-versus-restaurant dichotomy. The establishment's strategic location, brimming with cultural landmarks and a constant flow of people, makes it an ideal spot for a venue that offers more than just a meal, but an experience throughout the day. Singh’s prior venture, Mustard, which offered a more defined culinary path, paved the way for Portal’s expansive and flexible approach to cuisine.
Ambiance and Design
Stepping into Portal is akin to entering a sanctuary where the city's bustle fades away, replaced by an atmosphere of refined tranquility and sophisticated charm. The interior design masterfully blends neoclassic elements with a contemporary sensibility, creating a space that feels both grand and welcoming. High ceilings, elegant arches, and stately pillars lend an air of architectural grace, while a unique lighting system that dynamically shifts from bright daylight hues to warm, dim evening tones mirrors the passage of time and sets the mood for any hour. A captivating hand-painted mural serves as a visual narrative, depicting iconic scenes of South Mumbai, from the bustling art district of Kala Ghoda to the serene waves of the Arabian Sea along Marine Drive. This thoughtful design ensures that while the space evokes a sense of timeless elegance, it remains an unpretentious, lively bistro and cafe, designed for everyday enjoyment and memorable moments.
Borderless Culinary Creations
Portal distinguishes itself with a "borderless and cuisine-agnostic" menu, a deliberate departure from the more constrained offerings of Singh’s previous restaurant, Mustard. This new approach allows for creative freedom, drawing inspiration from global flavors and techniques without being tied to any single culinary tradition. Diners can expect an adventurous gastronomic journey, with dishes like miso pasta and togarashi-infused gazpacho sitting alongside innovative creations such as a rice sandwich featuring tofu or tuna, elegantly presented with balsamic, soy, and a hint of wasabi. The menu is a testament to playful experimentation, prioritizing flavour and enjoyment above strict categorization. Each dish is crafted with a keen eye for detail and quality ingredients, from the sweetness of the sweet potato fries to the sharp kick of wasabi and the rich depth of balsamic glaze. Even traditional items like the Caesar salad are elevated, featuring a generous chicken fillet instead of shredded chicken, reflecting a commitment to a satisfying and premium dining experience.
Signature Dishes Explored
The culinary exploration at Portal yields a range of highly memorable dishes. The roasted beetroot salad is a visual and gastronomic delight, presenting slow-cooked beetroot and rocket leaves in a near-floral arrangement, accented by pickled onions filled with goat cheese cream and a balsamic drizzle. Another standout is the tomato tartar, a vibrant composition utilizing four types of tomatoes—cherry red and yellow, regular diced, and sun-dried—served atop a creamy almond cheese base with crunchy quinoa, ensuring a burst of flavour in every mouthful. For a more substantial offering, the "big boy sando," packed with paturi-style paneer marinated in mustard, pickled beetroot, and avocado, nestled within soft bread, is a hearty choice, best enjoyed immediately for its textural integrity, and is complemented by delectable sweet potato fries. The pasta selection also showcases ambition, featuring items like a gluten-free Genovese pasta made with semolina, catering to diverse dietary preferences while delivering exceptional taste. For non-vegetarian patrons, options abound, including a roast buff sandwich, lamb kimchi sando, buff filet steak piccata, and perfectly roasted chicken and miso-glazed rawas.
Decadent Desserts and Drinks
No dining experience at Portal is complete without indulging in their thoughtfully crafted desserts and refreshing beverages. The Maple Pumpkin Tart is a rich and satisfying finale, surprisingly decadent and already a customer favorite, often ordered again. Equally captivating is the "almost apple pie," featuring baked apple slices crowned with torched castor sugar, presented on a light crème with a hint of cinnamon, a dish so delightful that it tends to be savored until the last bite. Complementing the food is an equally impressive beverage program. A dedicated coffee bar serves brews from Karabi coffee, alongside matcha and freshly squeezed juices, perfect for a daytime pick-me-up. In the evening, the bar transitions to offering a curated selection of cocktails, wines, and non-alcoholic concoctions. The auditory experience is also meticulously planned, with music shifting from easy listening during the day to jazz as the afternoon progresses, and a more energetic selection as night falls, further enhancing the restaurant's unique all-day appeal.
