Aviation Meets Gastronomy
A striking sight on the Pune-Satara highway at Khed-Shivapur, a former Air India airplane now beckons travelers as the Brownstone Air Dine Restaurant.
This innovative establishment is part of a burgeoning trend across India where decommissioned aircraft are ingeniously repurposed into distinctive dining venues. Milind Shinde, a pharmacy student and farmer's son, envisioned a departure from conventional roadside eateries, drawing inspiration from similar aviation-themed concepts that have previously taken flight in major cities. This particular venture marks the tenth such transformation in the country, showcasing a creative fusion of aviation heritage and culinary delight. The aircraft, acquired in 2023, underwent extensive interior customization before opening its doors to the public in late 2025, offering patrons an unparalleled dining ambiance.
Inside the Fuselage Feast
The Brownstone Air Dine Restaurant is meticulously designed to accommodate approximately 75 diners within its repurposed aircraft fuselage, offering a truly immersive experience. Beyond the immediate novelty of dining inside a plane, the interior is thoughtfully enhanced with vibrant lighting, decorative accents, and charming landscaped garden areas, providing numerous picturesque spots for visitors to capture memories. A dedicated children's play zone further cements its status as an ideal family outing destination. The seating arrangements themselves are a testament to thoughtful design, with chairs and modules specifically manufactured in Bengaluru and Satara from durable fiber materials, ensuring both longevity and aesthetic appeal. This attention to detail transforms the aircraft cabin into a comfortable and visually engaging dining space.
Culinary Delights Await
Brownstone Air Dine strictly adheres to a vegetarian menu, with a distinct emphasis on Jain and Rajasthani culinary traditions. The kitchen is staffed by a skilled team, including chefs from Uttarakhand and specialized Jain chefs, ensuring a diverse and authentic offering for vegetarian patrons. Complementing the aviation theme, the menu is presented in a format reminiscent of an airbase or airport layout, eschewing typical headings for creative classifications like 'Kheton Ki Hariyali' and 'Desi Matke Ka Kamaal'. Signature dishes that have garnered considerable popularity include Paneer Lajawab, Paneer Lababdar, Lasuni Paneer, Paneer Hariyali Tikka Masala, Singapuri Noodles, and Singapuri Fried Rice. Even beverages are whimsically categorized under 'Chalte Chalte', featuring a wide array of milkshake flavors, while desserts range from classic gulab jamun with ice cream to basundi and triple sundaes, alongside refreshing seasonal mocktails and juices.
Navigating Growth Pains
Like many ambitious ventures, Brownstone Air Dine initially navigated the complexities of rapidly increasing popularity, sometimes experiencing crowds that exceeded its capacity. To mitigate disappointment and ensure a seamless experience for all visitors, service operations have been significantly scaled up. While an outdoor dining area exists, the primary draw remains the unique experience of dining inside the aircraft. Beyond the culinary offerings, the premises also feature retail shops and recreational spaces available for rent, thereby fostering employment opportunities for the local community. The owners perceive this diner as more than just a restaurant; it's a destination designed for families to relax and savor a meal in an exceptionally unique atmosphere, with plans to further expand the menu and introduce more themed attractions in the future.
