On the bustling Pune-Satara highway, a retired Air India aircraft has found a new life, captivating passersby and drawing crowds to the Brownstone Air Dine
Restaurant. This unique eatery, located in Khed-Shivapur, is a testament to innovative repurposing, turning a grounded metal bird into a vibrant culinary hub. The concept taps into a growing trend across India where decommissioned aeroplanes are being converted into distinctive dining experiences. Milind Shinde, a pharmacy student and son of a farmer, envisioned this project, aiming to offer an alternative to conventional roadside eateries. Inspired by similar air-themed ventures in cities like Delhi and Mumbai, Brownstone Air Dine marks the 10th such establishment nationwide. Purchased in 2023 and opened to the public at the end of 2025, the transformation took considerable effort to convert the aircraft's interior into a welcoming dining space, a remarkable feat of engineering and design.
Interior Ambiance & Design
Step inside the Brownstone Air Dine, and you'll find an environment designed for comfort and visual delight, accommodating approximately 75 diners within the plane's fuselage. The interior is thoughtfully appointed with bright illumination, decorative accents, and meticulously crafted small landscaped gardens, creating picturesque corners perfect for memorable photos. Recognizing the need for family-friendly destinations, a dedicated children's play area enhances its appeal. The seating infrastructure itself is a custom development, with chairs and modules manufactured using durable and design-flexible fiber materials in Bengaluru and Satara, ensuring both aesthetics and longevity. This attention to detail ensures that dining inside the plane is an immersive and pleasant experience, distinct from any ordinary restaurant.
Culinary Delights Served
Brownstone Air Dine proudly serves a strictly vegetarian menu, with a special emphasis on Jain and Rajasthani cuisines, catering to a wide array of palates. The culinary team comprises skilled chefs, including those from Uttarakhand and Jain specialists, guaranteeing authentic and diverse vegetarian preparations. The menu design itself is a nod to the aviation theme, mirroring an airbase or airport layout rather than traditional headings. Instead of 'starters' or 'main course', you'll find creative categories like 'Kheton Ki Hariyali' (Greenery from the Fields) and 'Desi Matke Ka Kamaal' (The Magic of Earthen Pots). Popular choices include dishes like Paneer Lajawab, Paneer Lababdar, Lasuni Paneer, Paneer Hariyali Tikka Masala, Singapuri Noodles, and Singapuri Fried Rice. Even beverages are creatively categorized; milkshakes are found under 'Chalte Chalte' (On the Go), featuring an array of flavours from mango to dragon fruit. Desserts and mocktails complete the experience.
Operational Evolution & Future
Like many novel ventures, Brownstone Air Dine experienced an initial surge in popularity, sometimes exceeding its capacity, leading to adjustments in service to ensure no guest leaves disappointed. While an outdoor dining area exists, the primary draw remains the unique experience of dining within the aircraft itself. Beyond its culinary offerings, the premises also house shops and recreational zones, which are rented out, thereby generating employment opportunities for the local community. With the rise of highway tourism and experiential dining around Pune, the restaurant is strategically positioned as a compelling stop for travellers heading towards Satara, Kolhapur, and other parts of southern Maharashtra. The owners aim to continually evolve, with future plans including menu expansion and the introduction of more themed attractions to enhance the visitor experience.
