The Dosa Deconstructed
The city of Surat has garnered a reputation for its adventurous approach to fusion cuisine, often pushing the boundaries of what's considered conventional.
Its latest culinary endeavor, the Aam Ras Cheese Dosa, has become a focal point of intense online discussion, proving that not all innovations are met with universal acclaim. This unique dish, which originated from a summer video shared by food blogger Vatsal Jariwala and subsequently went viral after being reposted on X, has sparked a polarized reaction, with opinions sharply divided between those who appreciate the bold experimentation and those who view it as a culinary misstep. The preparation itself is a departure from tradition. A standard dosa is laid out on the griddle. However, instead of the typical spiced potato filling, the vendor generously applies a thick, bright mango pulp, known as Aam Ras, directly onto the crepe. This sweet base is then topped with a substantial amount of cheese, creating a medley of sweet, salty, and fermented flavors that has left many food enthusiasts perplexed. Adding another layer to this unusual combination is a liberal drizzle of fresh coriander, intended to complement the diverse taste profile.
Internet's Polarized Response
The digital reaction to Surat's Aam Ras Cheese Dosa was immediate and, for the most part, highly critical. Upon its widespread sharing on platforms like X (formerly Twitter), the dish became the subject of a lively debate, with users expressing a range of sentiments from admiration for its sheer audacity to outright dismay. While some commenters acknowledged the 'bravery' behind the creation, a significant portion found the amalgamation of South Indian staple and Gujarati summer delicacy to be highly questionable. One user pointed out what they considered a fundamental misunderstanding of the dish, stating, 'This is a sweet crepe, not a dosa.' Defensive locals were quick to distinguish the actions of Surat's vendors from the broader Gujarati culinary landscape, with one urging, 'DO NOT generalize all Gujaratis with what Surati do.' Contrarily, many expressed strong disapproval, with one user bluntly remarking, 'Surat is a food graveyard. So many dishes died there.' The common practice of adding cheese to various street foods also drew commentary, with a user humorously suggesting, 'There was potential to add another cheese block. Wasted.' Despite the widespread criticism, a segment of netizens found humor in the city's persistent innovation, with one quip suggesting that if Surat's inventive spirit were applied to space exploration, 'we’d have another NASA.'
