Former actor and content creator Sameera Reddy, known for her commitment to fitness, has unveiled a creative adaptation of the beloved chocolate brownie.
This isn't just any dessert; it's a 'guilt-free' indulgence designed to be both rich and nourishing. Reddy shared her innovative recipe, featuring lauki (bottle gourd) as a star ingredient, emphasizing how this modification results in a treat that feels good even after consumption. This approach aligns with a clean eating lifestyle, offering a way to enjoy a decadent chocolate flavor without the typical heavy feeling associated with traditional brownies. Crafting the Delicious Treat
The process of creating these unique lauki brownies begins with preparing the grated bottle gourd. It's lightly squeezed to remove excess moisture while retaining enough to ensure a moist crumb in the final product. To this base, a blend of ingredients is added: powdered jaggery for sweetness (adjustable to personal preference), creamy peanut butter for richness, milk, oil for binding, and vanilla extract for aroma, all combined into a smooth, homogenous mixture. Separately, the dry components are brought together, comprising either all-purpose flour (Maida) or an alternative like oat flour, rich cocoa powder, baking soda and baking powder for leavening, and a pinch of salt to enhance flavors. These dry elements are then thoroughly incorporated into the wet batter. Finally, chocolate chips are stirred in for those delightful pockets of melted chocolate. The batter is then poured into a prepared baking tray, either greased or lined with parchment paper, and baked at 180 degrees Celsius for approximately 25 to 30 minutes, until a toothpick inserted comes out clean. Allowing the brownies to cool slightly before slicing ensures neat portions.

This high water content makes it an exceptional ingredient for achieving a soft, fudgy texture in baked items. While lauki excels at adding moisture, Apte clarifies that it cannot entirely replace the role of fats like butter or oil, which contribute essential richness and mouthfeel. Instead, it functions best as a partial substitute, effectively reducing the overall fat content while still preserving a desirable texture. This strategic use of lauki allows for a healthier brownie without sacrificing enjoyment.
