agricultural legacy and its forward-looking AI ambitions. The menu, meticulously crafted by the ITC Group, embraced the 'Shishir Ritu' theme, signifying the transition from late winter to early spring. This theme, encapsulated by the philosophy "Vikas bhi, Virasat bhi" (Development and Heritage), prominently featured locally sourced millets and produce with Geographical Indication (GI) tags. The event welcomed distinguished guests, including international dignitaries like French President Emmanuel Macron and Brazilian President Luiz Inácio Lula da Silva, alongside prominent figures in technology and policy, all treated to a culinary experience that honored both tradition and innovation.
Vibrant Street Food Starter
The gastronomic journey commenced with 'Varnila,' an artfully presented starter designed to evoke the lively spirit of Old Delhi's street food scene. This dish offered a compelling sensory experience with its vibrant appearance and varied textures. At its core was a refreshing blend of baby spinach crisps and delicate yogurt spheres, creating a delightful contrast. The flavors were expertly balanced with a tangy tamarind-date chutney and a zesty cilantro relish. A dusting of Old Delhi masala added a familiar, aromatic note, all anchored by a crisp made from multifloral Jowar (Sorghum) millet, contributing a wholesome crunch. This starter delivered approximately 213 kcal per 100 g, setting an exciting tone for the meal.
Main Course: Pahadi Flavors
The main course, aptly named 'Sasya' (The Harvest), transported diners to the mountainous Kumaon region of Uttarakhand, showcasing its distinctive 'Pahadi' (mountain) culinary identity. A central highlight was the Rajma Gilawat, featuring the esteemed GI-tagged Munsyari Rajma, renowned for its exceptionally creamy consistency and subtle nutty undertones. Accompanying this star ingredient was a fragrant Pulao, a delightful medley of traditional Pahadi rice and Jhangora (Barnyard Millet), offering a wholesome grain component. The dish was further enriched by Kumaoni Aloo Gutke, tender potato chunks seasoned with the unique Himalayan spice Jakhya, served alongside a smooth, vibrant tomato-anari (pomegranate) sauce. This main course provided around 331 kcal per 100 g, a testament to its hearty and nourishing composition.
Artisanal Breads Showcase
The selection of artisanal breads offered a delicious exploration of India's diverse baking traditions, reflecting regional specialties from Uttar Pradesh to Kashmir. Among the offerings was Taftaan, a leavened flatbread infused with saffron, originating from Uttar Pradesh. Its characteristic light and flaky texture made it a delightful accompaniment. Representing the northernmost region, Kashmiri Girda was presented – a traditionally round bread distinguished by its unique dimpled surface, baked fresh to embody the authentic flavors of the Kashmir Valley. These breads complemented the main course, adding layers of texture and taste that highlighted India's rich culinary heritage.
Dessert Fusion Finale
The concluding course, titled 'Nisarga' (Nature's Creation), masterfully blended classic Indian sweets with contemporary global pastry techniques, offering a sweet and memorable end to the meal. The signature creation was a Rasmalai Tres Leches, a reimagined dessert featuring a chena cake sponge, ingeniously soaked in sweetened milk to achieve a delightful moistness reminiscent of traditional rasmalai. This creamy delight was served atop a bed of Bajra (Pearl Millet) streusel, providing a pleasing textural contrast, and accompanied by a vibrant winter berry preserve that added a fruity tang. Guests also had the option of traditional beverages, including aromatic Kashmiri Kahwa, rich South Indian Filter Coffee, and fine Darjeeling Tea, before concluding with an Indian Rose and Mishri Gulkand Chocolate Leaf (Paan) for a final touch of unique Indian flavor. This fusion dessert strongly aligned with India's 'Millet Mission,' underscoring the nation's commitment to sustainable and climate-resilient agriculture as a cornerstone of its AI-driven food security strategy.
