Dahi ke Kabab Delight
Experience the melt-in-your-mouth magic of Dahi ke Kabab, a beloved North Indian vegetarian starter. Chef Bishan Singh Negi shares his expertise to guide
you through creating this creamy delicacy. You'll begin by combining hung curd with grated paneer, besan, and breadcrumbs in a mixing bowl. To this mixture, incorporate finely chopped green chili, sweet raisins, crunchy almonds, and fresh chopped coriander and mint for a burst of flavour. The blend is then seasoned with cumin powder, black pepper, garam masala, and salt, brought together to form a soft, dough-like consistency. This dough is carefully divided into six equal portions and shaped into small patties, ready for a delightful coating of semolina for that perfect crisp texture. Finally, these patties are shallow-fried in moderately heated oil for about 3–4 minutes per side until they achieve a beautiful golden-brown hue. Serve them hot, ideally with a refreshing mint chutney, to complete this exquisite appetiser.
Watermelon Feta Bruschetta
Sunil Dasila, Head Chef at Salt Cafe, presents a vibrant and refreshing Watermelon Feta Garlic Bruschetta, an ideal snack to elevate your home parties. The creation starts with a luscious spread made by whisking together mayonnaise, thick hung curd, lemon juice, and a touch of olive oil, seasoned with salt and pepper to achieve a smooth, tangy profile. Simultaneously, prepare the watermelon by cubing it into small, bite-sized pieces, lightly seasoning them with a pinch of salt and a squeeze of lemon to enhance their natural freshness without overpowering it. Ensure your garlic bread is perfectly crisp, re-toasting it for 2–3 minutes if necessary for that ideal crunch. A generous layer of the creamy spread is then applied to each piece of garlic bread, followed by a scattering of the prepared watermelon cubes. The dish is finished with a liberal sprinkle of crumbled feta cheese, a delicate drizzle of olive oil, a crack of fresh black pepper, and a final garnish of finely chopped fresh parsley, creating a harmonious blend of sweet, salty, and creamy notes.
