This version incorporates lauki, or bottle gourd, a vegetable not typically associated with desserts, to create a rich, chocolatey, and surprisingly nourishing treat. Reddy documented her process on Instagram, highlighting that this brownie offers a satisfying experience without the usual post-indulgence guilt. Crafting the Brownie
The creation of Sameera Reddy's lauki brownies begins with preparing the star ingredient: one cup of grated lauki. It's crucial to lightly squeeze out excess moisture, ensuring the gourd remains soft but not waterlogged. To this prepared lauki, a harmonious blend of wet ingredients is introduced, including 3/4 cup of powdered jaggery for sweetness, 1/4 cup of peanut butter for richness, 1/4 cup of milk, 1/4 cup of oil for a smooth base, and 1 teaspoon of vanilla extract for aroma. These components are mixed to form a homogenous batter. In a separate bowl, the dry ingredients are combined: 1 cup of Maida (all-purpose flour) or an alternative flour, 1/4 cup of cocoa powder for that intense chocolate flavor, 1/2 teaspoon of baking soda, 1 teaspoon of baking powder for leavening, and a pinch of salt to enhance all the flavors. These dry elements are then thoroughly integrated into the wet batter. Finally, 2–3 tablespoons of chocolate chips are folded in for delightful bursts of chocolate. The resultant mixture is poured into a greased or parchment-lined baking tray and baked at 180 degrees Celsius for approximately 25 to 30 minutes, or until a skewer inserted into the center comes out clean. However, Apte clarifies that lauki functions best as a partial substitute for fats like butter or oil, rather than a complete replacement. While it contributes to moisture, it cannot fully replicate the role of fat in providing richness, mouthfeel, and structural integrity to the baked goods. It aids in reducing the overall fat content while still maintaining a desirable consistency. Ginni Kalra, Head of Dietetics at Aakash Healthcare, suggests that lauki brownies are a suitable dessert option for individuals focused on weight management or seeking to maintain a balanced diet without completely foregoing sweets.
