Crafting The Perfect Base
Begin your culinary journey by preparing a delightful base for your mango cheesecake. This involves finely crushing 240 grams of digestive biscuits until
they form a crumbly texture. For optimal results, a grinder can be used to achieve a consistent crumb. Next, incorporate 120 grams or approximately half a cup of melted butter into the biscuit crumbs, ensuring thorough mixing. This buttery mixture is then carefully spread into an 8-inch diameter and 2-inch high silicon mould. To create a firm and compact base, gently press the crumbs down using the flat bottom of a cup, ensuring an even layer. Once packed, refrigerate this base for a minimum of 30 minutes to allow it to set firmly before proceeding to the next stage of cheesecake preparation.
Whipping Up The Filling
Now, it's time to create the luxurious filling that will define your mango cheesecake. In a separate bowl, combine 2¼ cups of thick hung curd, 1½ cups of condensed milk, and ¾ cup of unsweetened dairy cream. Mix these ingredients thoroughly until you achieve a smooth and homogenous blend. For the slurry, warm 9 tablespoons or roughly ⅓ cup of milk and whisk in 23 grams or 3 tablespoons of cornstarch until no lumps remain. Gradually introduce this cornstarch slurry into the hung curd mixture, blending well to ensure complete integration without any grainy texture. This step is crucial for achieving the signature creamy consistency of the cheesecake.
Baking And Setting
With your base prepared and filling ready, the next step involves baking and chilling your cheesecake. Preheat your oven to 160°C (320°F). Carefully place the silicon mould, containing the cookie crumb base and the filling, onto a baking tray. Introduce this into the preheated oven and bake for approximately 35 minutes at the set temperature of 160°C. Once baked, remove the cheesecake from the oven and allow it to cool down completely at room temperature. For optimal setting, refrigerate the cheesecake for at least two hours, though overnight chilling is highly recommended for the best texture and firmness. This extended chilling period ensures the cheesecake is perfectly set and ready to be demoulded.
Garnishing For Perfection
The final touch to your exquisite eggless mango cheesecake involves a beautiful and flavourful garnish. Once the cheesecake has been properly chilled and is ready to be served, carefully remove it from the silicon mould. Take two large mangoes and slice them into desirable shapes, such as neat cubes, delicate slices, or decorative fans. Artfully arrange these fresh mango pieces on top of the set cheesecake, creating an appealing visual display that highlights the star ingredient. To add a pop of freshness and colour, place a few mint sprigs amongst the mango slices. This final flourish not only enhances the aesthetic appeal but also complements the sweet mango flavour with a refreshing herbaceous note, making your cheesecake a true summer masterpiece.
