The Natural Ripening Process
Fruits, especially bananas, naturally ripen over a period of 4-6 days when kept at room temperature. This process is accelerated by trapping ethylene,
a natural plant hormone, around the fruit. To ensure optimal natural ripening, it's crucial to harvest the fruit when it's mature. Methods like wrapping individual fruits in paper or placing them in paper bags can help. Another technique involves layering unripe fruits over paddy husk or wheat straw, which also aids in creating an environment conducive to ethylene concentration and thus faster ripening. These natural methods ensure that the fruit develops its full flavor and nutritional profile without any harmful additives, making it a wholesome choice for consumption.
Spotting Chemical Ripening
Be cautious if you notice that the crown and fingertips of a banana remain green while its flesh is yellow. This is a strong indicator that the fruit has been ripened using chemicals. The most common culprit is calcium carbide, a substance often used to quickly turn bananas yellow. When dipped in a calcium carbide solution, the main body of the banana may turn yellow rapidly, but the upper and lower extremities often retain their green hue. This visual cue is a critical alert for consumers to investigate further and avoid potentially harmful produce.
Health Risks of Artificial Ripening
The artificial ripening of fruits, particularly with chemicals like calcium carbide, poses significant health risks. Residues from calcium carbide can irritate the stomach, leading to discomfort such as bloating, diarrhea, and abdominal pain. Headaches, dizziness, and a general feeling of unease are also common side effects, especially for sensitive individuals. Furthermore, the gases released during artificial ripening can affect the respiratory system, potentially causing throat irritation and mild breathing difficulties. Inhaling fumes from improperly handled ripening agents can exacerbate these issues. Vulnerable groups, including children and pregnant women, are at higher risk of developmental concerns and complications due to exposure to these toxic residues.
FSSAI's Regulatory Framework
The Food Safety and Standards Authority of India (FSSAI) has taken a firm stance against the unsafe artificial ripening of fruits. Unscrupulous traders often resort to industrial-grade calcium carbide, known as “masala,” which releases acetylene gas. This chemical is banned in India due to its harmful contaminants, arsenic and phosphorus, which can cause dizziness, irritation, and weakness. Recognizing the need for safer alternatives, FSSAI permitted the use of ethylene gas for artificial ripening through a notification on August 23, 2016. This gas, when used under controlled conditions, is a safe and effective ripening agent.
Safe Ripening with Ethylene
FSSAI mandates specific conditions for the safe use of ethylene gas in fruit ripening. Bananas can be exposed to ethylene for a duration of 24 to 28 hours. The optimal ripening temperature is maintained between 15 to 18 °C, with a relative humidity of 90-95%. It is essential that fruits are transferred to a ripening chamber only after they have reached the desired ripening temperature, following a pre-cooling phase. Ethylene gas can be supplied to ripening chambers via gas cylinders, compressed aerosol cans, or specialized ethylene generators. For smaller quantities or in cartons and boxes, ethephon in powdered form or ethylene gas encapsulated in safe, biodegradable materials like cellulose, starch, and proteins can be utilized.
