Pallavi Kumar Aggarwal, known as Meera, experienced a life-altering event that shifted her trajectory from a successful career in fashion design and corporate
leadership to a path of profound personal and physical healing. After a serious knee injury left her unable to walk properly, a diagnosis that doctors confirmed would be permanent, Meera embarked on an extensive personal research journey. Her previous life was characterized by intense physical activity, including marathon running, and a demanding professional schedule, where she believed a non-vegetarian diet was contributing to her fitness. This unforeseen injury, however, forced a complete reevaluation of her health choices and led her to explore alternative approaches to recovery and well-being, fundamentally altering her perspective on food and life.
Embracing Indian Veganism
Inspired by documentaries and a personal quest for recovery, Meera transitioned to a vegan lifestyle, focusing on traditional Indian foods. She began incorporating nutrient-rich ingredients like ragi, coconuts, millets, and various dals into her daily meals. Meera found that adopting a vegan diet was surprisingly seamless in India, given the prevalence of plant-based staples. She even started creating her own healthy beverages, such as ragi milk and coconut buttermilk, which she found beneficial for overall health. This dietary shift was not just about exclusion but about embracing the abundance and healing properties inherent in Indian vegetarian cuisine, proving that recovery and delicious food could go hand in hand.
The Birth of Healing Cakes
Despite her dietary changes, Meera missed the simple pleasure of baked goods. This led her to experiment with creating vegan versions of her favorite treats, like cookies and cakes. She ingeniously substituted traditional ingredients like milk and butter with plant-based alternatives such as nut butters, cold-pressed oils, and vegan milk. What began as a personal culinary experiment soon garnered attention from friends and family, who encouraged her to share her creations more widely. This positive reception ultimately spurred the launch of her home bakery, 'Idunn,' which focuses on using fresh, nourishing ingredients to produce delightful baked goods that align with her health-conscious philosophy.
An Ayurvedic Perspective
Meera's approach to food is also guided by Ayurvedic principles. She believes in consuming foods at the right time and in moderation, rather than viewing any single ingredient as inherently bad. Her daily diet consists of regular Indian meals, carefully prepared to enhance digestion, such as adding sonth and heeng to chana dal. She prioritizes seasonal produce and continues to make her own vegan milks and incorporate a variety of millets into her cooking. This holistic view integrates traditional Indian dietary wisdom with her own health journey, emphasizing balance and mindfulness in eating.
Conquering New Peaks
Her transformation extended beyond dietary changes and baking. Meera's renewed strength and resilience allowed her to push her physical limits significantly. She successfully participated in the challenging Ladakh Marathon, completing it within the set time, thus defying the earlier medical prognosis. Not content to stop there, she further tested her endurance by trekking to Everest Base Camp and summiting high-altitude peaks like Mt. Yunam and Friendship Peak. These remarkable achievements stand as a powerful testament to her recovery and unwavering determination, showcasing the profound impact of her holistic health transformation.
