The French Future Food Fermentation Project, known as Ferments du Futur, has received a significant funding boost of €19.1 million ($21.8 million) from the French government's National Research Agency. This funding is part of a larger €100 million investment
under the France 2030 program, aimed at advancing fermentation technologies for food production. The project focuses on enhancing gut health through the industrialization of fermentation processes, which can produce high-value ingredients like proteins and vitamins. The initiative is a collaboration between public and private sectors, including research institutions and companies like Danone and Bel Group. The project aims to optimize fermentation management through automation and digitalization, and to explore solid-state fermentation for sustainable food production.
