A new study has introduced a Nutritional Value Score (NVS) system to rank foods based on their overall nutritional value and their role in preventing chronic diseases, moving beyond simple calorie counts or single components like sugar or fat. Developed
by researchers, the NVS considers seven components: vitamins, minerals, protein, omega-3, fiber, caloric density, and ratios between nutritional components (e.g., sodium vs. potassium, saturated vs. unsaturated fat, carbohydrates vs. fiber). Ultra-processed foods receive a 25% penalty in their score. The study, which tested 289 common foods from various countries including the United States, found that dark green leafy vegetables, organ meats, fish, and seafood received the highest scores. Conversely, soft drinks, sweet pastries, instant noodles, ultra-processed snacks, and refined grains scored particularly low. The NVS also revealed significant nutritional differences within broad categories like fruits and vegetables, with spinach scoring much higher than eggplant, and guava higher than watermelon.
