What's Happening?
The New Castle Career Center (NCCC) has expanded its Culinary Arts curriculum to include a new Baking & Pastry Capstone program. This initiative allows students to delve into advanced baking and pastry techniques, building upon the foundational skills
taught in the introductory Culinary Arts program. The new program, spearheaded by Chef Robin Pickett, NCCC Culinary Arts/Baking & Pastry Instructor, offers three new courses: Baking Science, Cakes/Icing/Fillings, and Classical Pastry. Students completing these courses can earn a Baking and Pastry Certificate through Ivy Tech Community College. The curriculum covers the scientific principles behind baking, various cake decorating techniques, and advanced French pastry methods, including croissants, éclairs, and tarts. A key component of the program is a capstone project that simulates a real-world customer order, requiring students to manage the entire process from initial consultation to final product delivery, including cost determination and adapting to unexpected changes.
