Kneads Bakery Café, based in Westport, has signed a lease for two new locations at the Greenwich Crossing redevelopment project in Greenwich, Connecticut. This expansion is part of The Ashforth Co.'s $30 million renovation of the Greenwich Metro-North
train station area. Kneads will occupy a 2,000-square-foot space on Railroad Avenue and a 200-square-foot space inside the train station. The new locations are anticipated to open in late spring 2027. Kneads Bakery is known for its in-house stone mill, which grinds 100% organic whole grain flour daily for its breads and pastries. The café's menu also features breakfast items, lunch sandwiches, soups, salads, and Irving Farm coffee. The original Kneads café opened in 2020, and a second location on Fairfield's Post Road is slated to open in October.
