Lindo Mexico Grill & Seafood, a local restaurant chain in Albuquerque, is expanding its operations with a new location on the city's West Side. The Valles family, who owns the business, plans to construct an 8,200-square-foot restaurant at 3937 Coors
NW. This expansion marks the third location for Lindo Mexico, which began over two decades ago. The new establishment will be part of the Oxbow Center commercial development. Construction is projected to start in October and conclude by December 2027, with an estimated cost of $1.5 million. Additionally, the family intends to remodel their Central Avenue location, a project expected to cost around $150,000, starting in November and finishing by March of next year. The remodel will update the design while retaining elements of the original aesthetic. The new West Side location will also introduce new menu items, including an overhauled cocktail menu and a breakfast and coffee menu featuring Mexican-inspired dishes and beverages, set to launch in October.
