In early July, veteran restaurateur Bryan Dayton launched a new French bistro, Cinq à Sept, in North Boulder. This new venture is part of Dayton's Half Eaten Cookie Hospitality group and occupies the space previously held by the modern Mexican restaurant,
Bellota. The kitchen is led by chef and partner Samuel McCandless, who also oversees other properties under the group. The bistro's name, Cinq à Sept, refers to the French term for the post-work happy hour. The restaurant aims to explore the simplicity of French cooking, inspired by McCandless's passion for the cuisine, which began in his teenage years. The bistro features a classic Parisian vibe with electric blue walls and rustic wood chairs, offering a concise menu of French appetizers and entrées.
