American Key Food Products Inc. (AKFP) has introduced King Lion modified tapioca starch, designed to address formulation challenges in dairy products. This plant-based starch enhances stability, thickening, and texturizing in products like yogurts, puddings,
and flans. According to Philippe Benyair, senior vice president for technical sales at AKFP, the starch offers high-viscosity strength and exceptional process stability, particularly in formulations undergoing sterilization and other high-temperature processes. The starch is also applicable in frozen entree sauces, soups, noodles, and acidic condiments, providing a versatile solution for various food applications.
