A new study by Nofima, the Norwegian Institute of Food, Fisheries and Aquaculture Research, has identified a novel method to enhance plant-based food products by incorporating marine side streams. The research, conducted by Liv Helene Sickel for her PhD
thesis at the University of Bergen, focuses on utilizing by-products from the seafood industry, such as heads, backbones, and skin from cod and salmon, which are typically used for animal feed, fertilizer, or biofuel. By combining these fish-based ingredients with plant proteins like pea protein and wheat gluten and processing them through extrusion, the study found that nutritious and sustainable food products can be created. The findings indicate that water in these formulations can be partially replaced with protein concentrate from fish side streams without significantly altering the texture, while simultaneously boosting the nutritional value. For instance, a product containing 25 percent fish achieved a texture similar to a fully plant-based reference sample when processed at a higher temperature.
